Zucchini Muffins

Tried this yesterday. No need for splenda, since the coconut flour is very sweet.

60g Almond Meal
120g Coconut Flour
1.5 Zucchini, grated zucchini (leave skins on)
3 Whole Eggs
1 tsp. baking powder
1 tsp. cinamon

Mix all dry ingredients. Add eggs. Mix. Add Zucchini. Mix some more.
Fill in 2 tbsp per muffin. Bake for 30 min @ 180C/360F. Eat.

Yields 8 Muffins.
