I usually have this dish when i go to fancy places, but why pay so much for this simple dish.
I will attempt this once i get my new kitchen renovated, using only fresh meat, and organic free range inspected eggs. I got this recipe from a youtube video. I modified it.
1 anchovy filet chopped(optional)
2 teaspoons capers
1 teaspoon real dijon mustard, not grey shit.
1 egg yolk
5 oz tendorloin finely minced with a knife, ground meat loses the fine grain, plus its old
1 finely diced shallot
dashes of worchestershire sauce
dash of olive oil
wee bit tabasco
pepper to taste(already enough salt)
mix everything besides meat,
then add in meat and gently fold without making into hamburger paste
serve with baked rutabaga wedges.
if you have a semi reliable meat source or simply cant manage eating 100% raw beef you can sear the outside of the steaks first with a raw inside then mince it, the cooked edges will disappear since bacteria grows on the meat’s surface.
