My HSM Chilli

Here’s a quick chilli recipe i make sometimes, really easy to make.

1lb if lean ground beef.
4 tomatoes cubed up.
1 large onion chopped.
1 can of kidney beans
1 can of chickpeas (optional)
3 cloves of finely chopped garlic.
Cumin, paprika, chilli, salt and pepper to taste,
1 jar of tomato concentrate (unsweetened).
1 stock cube

  1. Lightly fry onion until translucent.
  2. Add beef, cook until brown.
  3. Add tomatoes.
  4. Add 1 cup of water with stock cube and 1 cup of water.
  5. Add beans (rinse first)
  6. Add jar of tomato paste.
  7. Add cumin, paprika and chilli to taste.
  8. Drop heat to very low and simmer for 2-3 hours to reduce.

Serve over steamed vegtables!

I really like the idea of the chilli being served over veggies. I havent thought of that, but I am going to have to try it! Looking forward to the photo.

I really bump my chili up with veggies. This one is full of zucchini (was supposed to be scalloped potatoes according the base recipe I modified.) Took the leftovers and poured them over roasted rutabaga. Tons of volume, low calories.

Ye normally when i make it, i do rice for everyone else and veggies for myself. I forgot to add, normally i throw a few chopped red peppers in there as well.

Definitely a batch dish, tripple the recipe and freeze some.
