Gingerbread Cookies


Found a recipe that I tweaked a tad bit. They came out a little dry, but were still quite good.

The goods:
2 large eggs
1/8 cup splenda
1/2 cup almond flour
1/4 cup coconut flour (sifted)
1/4 cup coconut oil (soft)
1 tsp natural molasses
2 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp baking soda
pinch of salt

Preheat oven to 350F/180C

Mix flours, ginger, cinnamon, baking soda & salt.

In a separate bowl, mix coconut oil and splenda. Then beat in eggs. Add molasses.

Mix wet and dry ingredients.

Scoop onto cookie sheet. I used parchment paper instead of “greasing” the cookie sheet. More of an experiment, not to shave calories. I probably won’t do that again.

Bake for 20 minutes.

Makes 7-10 cookies.
