Edamame Hummus, Cuban Picadillo

This garlic packed combo will make your breath noxious and your stomach happy:

Edamame Spinach hummus:

1 bag frozen shelled edamame, thawed
1/2 bag frozen spinach, thawed
1/3 cup almond butter
2 Tbsp lemon juice
3 Tbsp coconut vinegar (or vinegar of choice)
2 Tbsp salt
4 cloves garlic smashed
2-3 tablespoon olive oil

Blend in food processor. Spread on stuff.


1/4 cup coconut oil
1 white onion chopped
8 garlic cloves minced
6 bay leaves
2 pounds lean ground beef
1 can diced tomatoes in juice
3/4 cup sliced drained pimiento-stuffed green olives
6 oz can tomato paste
1 cup water
Several dashes salt to taste
1/2 tsp cloves
1 tsp cinnamon
1 tsp cumin
1/2 tsp oregano

  1. Saute onions and garlic in coconut oil.
  2. Brown meat in different pan and drain.
  3. Add all other ingredients to the meat.
  4. Simmer on low until it it thickens and the smell is irresistible.

Serve with rice, kale chips, sliced avocado, or edamame hummus.
