Is it possible to eat more than once per day as long as I’m staying within my calorie range for the day, or should I stick with only eating once per day?

For best results, stick to the plan as-is.
Adding additional meals increases the risk of slippage (miscounting numbers in the meal, subbing in some less-clean food because it “fits the calories”, etc.) and, really, it would just be tough to do while still sticking to the target macros because it’s not just about total calories - you’d need a meal that’s low calorie, almost entirely protein, extremely low fat, and low carb.
