Easy Beef Chili
1 pound ground beef
1 can diced tomatoes
2 Tbsp chili powder
Salt and pepper to taste
Easy dump-and-wait recipe. Pour it all in, mix, and let it cook for a few hours.
You can multiply this recipe to make bigger portions. This is my easy weeknight dinner, I eat it 3-4 times a week. Add other seasonings as desired (cinnamon, cumin, turmeric) for different flavors.
If you want to get a little fancier, here’s a recipe I made up myself:
1 large lamb shoulder (3-4 pounds)
2 slices bacon
1 can hard cider
Raisins and/or dried cranberries
Cook bacon in a skillet. Set aside. Leave bacon grease in pan.
Sear lamb shoulder on all sides in the bacon grease.
Put lam shoulder in slow cooker, cover with diced apples and onions, sprinkle a handful of raisins or dried cranberries on top, and pour in the can of hard cider. Profit.
