Dani's Pumped-Up Muffins


From the wifey. These kick the muffiney ass of any muffin recipe I’ve posted.

Pumped-up Pumpkin Muffins

It’s a pretty healthy alternative to all the ass-widening treats your friends and coworkers have been encouraging you to eat this holiday season.

They came to the rescue for me this week. I had one on hand every time the temptation for other delicious goodies arose.

Like everything in the Shugart house, they’re wheat-free and protein packed. Here’s the recipe:

6 scoops vanilla Metabolic Drive Low Carb
3/4 cup ground flaxseed
9 tsp Stevia
4 tsp baking powder
1 tsp salt
A crap load of pumpkin pie spice
18 egg whites (or 9 eggs)
1.5 Cups pumpkin, canned
4 tsp coconut oil

Combine all dry ingredients, then combine all wet ingredients, then combine the two combinations.
Spray the muffin tin with olive or coconut oil, then coat with protein powder.
Fill each tin 3/4 full with batter.
Lick the remaining batter out of the bowl, and smear some on your spouse.
Bake for approx 17 minutes at 350 degrees.

** If you don’t have vanilla protein powder, banana or chocolate will add a fun twist.

A crap load is half a shit-ton, or two “buncha’s.”


Chris…Lucky man. She lets you “borrow” her recipes in addition to the rest of her attributes.

Barachiel needs to understand that a Texas based “crap load” is different from the standard “crap load.” It’s all in the accent!

What would you recommend somebody do if they’re allergic to eggs in high concentrations?

i’ve never used these, but there are products for people who have egg allergies. Here’s one:

Problem is, these often contain a lot of crap you should avoid, like gluten, soy and corn syrup. I’d avoid the one above for sure.

I’ve also heard of people using unsweetened apple sauce instead of eggs. Worth Googling for details.


Has anyone toyed around with these at all? The girlfriend just made me some for finals week, and they’re great! Just asking because trying them made me think of grandma’s banana bread, and how maybe you could replace pumpkin with a smashed up older banana. Any other creative ideas out there?
