Pumped-up Pumpkin Muffins
It’s a pretty healthy alternative to all the ass-widening treats your friends and coworkers have been encouraging you to eat this holiday season.
They came to the rescue for me this week. I had one on hand every time the temptation for other delicious goodies arose.
Like everything in the Shugart house, they’re wheat-free and protein packed. Here’s the recipe:
6 scoops vanilla Metabolic Drive Low Carb
3/4 cup ground flaxseed
9 tsp Stevia
4 tsp baking powder
1 tsp salt
A crap load of pumpkin pie spice
18 egg whites (or 9 eggs)
1.5 Cups pumpkin, canned
4 tsp coconut oil
Combine all dry ingredients, then combine all wet ingredients, then combine the two combinations.
Spray the muffin tin with olive or coconut oil, then coat with protein powder.
Fill each tin 3/4 full with batter.
Lick the remaining batter out of the bowl, and smear some on your spouse.
Bake for approx 17 minutes at 350 degrees.
** If you don’t have vanilla protein powder, banana or chocolate will add a fun twist.
