Coconut Oil

Hi Chris. I’ve noticed that in a lot of your recipes you use coconut oil. Is there a nutritional reason, or is it just for your taste? I had trouble finding it in my grocery store, and picked up some walnut oil to use in your slow cooker oatmeal recipe. It worked great, but I was wondering if there were some health benefits to coconut oil I’m unaware of. Thanks a lot!

Coconut oil is a healthy saturated fat with tons of benefits. Doesn’t go bad when you heat it either, retains it’s healthful properties.
