Chocolate Coffee Ice Cream

For all of you with an ice cream maker, this is a pretty cool low carb treat. Here’s what you need

1 can coconut milk
2 scoops MD low carb chocolate powder
1 serving instant coffee
splenda (optional)

I put the coconut milk into the fridge for at least 24 hours. This way the coconut cream separates from the water. When your ready to go open up the can and spoon out the cream leaving behind the water. I then blend this with all the other ingredients and throw it into an ice cream maker. It is pure awesomeness.


Note to self:

Must. Buy. Ice cream. Maker.

Forgot to note, watch the ice cream maker and don’t let it get the concoction get too frozen.

Chris, go buy or borrow one stat, you will really enjoy this. Basically the same texture as real ice cream without the crap.
