Chicken nuggets using this technique. 25% almond flour, 75% brown rice flour for this one.

Another variation: cut up string cheese or get small mozzarella cubes/balls run through egg wash, run through an italian herb rice flour crust, bake at 400 8-12 minutes serve with homeade catchup with italian herbs in it and tomato chunks a la marinara sauce.
