Apple Cinnamon Muffins

1/2 stick melted butter
2 riped bananas smashed
1 tsp vanilla
1/8 cup of splenda
1/4 cup sifted coconut flour
3/4 cup almond flour
1/2 tsp baking soda
1 apple, sliced and diced
1 1/2 tsp cinnamon
3 eggs

Preheat oven to 370 F. Mix butter, eggs, bananas, vanilla, and splenda together. In a separate bowl, mix coconut flour, almond flour, baking soda, and cinnamon together. Add diced apples to wet mixture. Combine mixtures together. Pour into greased muffin pan. Bake for 15 to 20 minutes.

Made these today. I thought the batter was a little thick, so I made the mistake of putting in a bit of water. That made the consistency questionable (to put it nicely) once baked. However, if I’d have put in some melted coconut oil or olive oil instead they would have been great. The flavor is still good, even with my mistake. Maybe could use a bit more cinnamon, and maybe a touch of nutmeng. They could also use some gluten-free yeast, as with everything made with almond or coconut flour intead of wheat flour. And you can take this recipe anywhere as well, not just cinnamon and apples.
