Chris I remember you had a meatloaf recipe that was pretty good but for a filler you used oatmeal. Any updates to that recipe subbing out the oatmeal? I was thinking of trying food processed cauliflower. Any suggestions?
Yes, I tried diced cabbage (cole slaw) blend and it was fine. But I think your idea is better. Maybe steam and rice it first?

That sounds like a winner. Here’s a pic of my bread-less stuffing. Use mushrooms and cauliflower mostly. That should work for meatloaf.
I bet your meatball recipe might make a killer meatloaf too, those things had awesome flavor.
