Almond Bread for the Ovenless

This was an accidental discovery. After having a tragic accident trying to make almond flour waffles I decided to microwave the remaining batter in a bowl and see what happened. The end result was an awesome 1 inch thick dense cake. Now even if you don’t have an oven you too can have almond bread.<Dorm Room Dwellers Rejoice!>

2 Cups Blanched Almond Flour
2 tablespoons Olive Oil
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 1/4 cup Almond Milk
2 Whole Omega-3 Eggs

Mix dry ingredients, add wet ingredients. Split in to two microwavable bowls. Cook on high 3 minutes covered, then an additional 2 minutes uncovered. From here you could get creative, you could try using smaller bowls, you may need to adjust the cooking time, and make mini cakes that you could then cover with a nice protein enriched pudding or mixed berries in their own juice, etc… Cooking in this way will give you a moister and softer end product then baking.
